Easy Pavlova Recipe

Celebrate Christmas in style this season.

 

Try this giant berry covered pavlova because really, this is Christmas on a plate.⁠ We made an easy pavlova recipe topped with T2 Merry Berry Meringue infused cream and it’s worth every second in the kitchen!

 

INGREDIENTS

 

  • 4 egg whites
  • 1 cup caster sugar
  • 1 tsp lemon juice
  • 2 tsp cornflour
  • 1 punnet of blueberries
  • 1 punnet of raspberries
  • 1 punnet of strawberries
  • Icing sugar for decoration
  • 3 tsp T2 Merry Berry Meringue tea
  • 300mL thickened cream

 

METHOD

 

To make the pavlova

  1. Pre-heat oven to 130 degrees Celsius.
  2. Separate the egg whites from the yolks (you can keep the egg yolks and make custard for the Christmas pudding).
  3. In a metal bowl, add the egg whites and use an electric hand mixer to beat the egg whites until it forms soft peaks.
  4. Add the sugar, lemon juice and sifted cornflour and beat until stiff and glossy (anywhere between 6-10 minutes).
  5. Pinch a little mixture between your fingers to make sure the sugar has dissolved in the mixture. It shouldn’t feel grainy at all, otherwise you’ll have trouble down the track.
  6. Line a baking tray with baking paper.
  7. Pile meringue in a circular dome shape and hollow the centre slightly to make room for cream and berries on top! NB: the higher you make the sides the more likely it will collapse in the oven when drying out, so try for a flatter dome like circle, it still gets body as it cooks.
  8. Bake for 1.5 hours or until crisp on the outside.
  9. After 1.5 hours in the hot oven, turn your oven off and leave the Pavlova inside with the door ajar slightly for another 1.5 hours (min) or until the pavlova has cooled completely.
  10. Whilst you wait, it’s time to prepare the infused cream, because a pavlova is never complete without cream.

 

To make the infused cream

  1. Pour 300mL of thickened cream into a container and add 3 tsp of Merry Berry Meringue T2 tea.
  2. Stir to combine, seal with lid and pop in the fridge for 1.5 hours.
  3. Once time is up, use a sieve to strain the tea from the cream into a clean bowl, discard the tea.
  4. Use an electric hand mixer to whip the cream until it’s solid whipped cream (approx. 3-4 minutes).

 

To assemble

  1. Carefully place the Pavlova onto your serving dish.
  2. Delicately dollop on cream into slightly hollowed centre and hand place berries on top (don’t dump the punnet on top otherwise you risk a pavlova implosion).
  3. Find friends or family, sit around a table, laugh and be merry while enjoying this delightful Pavlova together.
